雪茄茄衣晾制過程中煙葉顏色和含水量變化及其相關(guān)分析

摘 要:探究雪茄茄衣在晾制過程中外觀顏色變化與內(nèi)在水分含量之間的關(guān)系,為實(shí)現(xiàn)其晾制過程中的精準(zhǔn)化操作提供參考。以德雪1號品種中部葉為試驗(yàn)材料,測定晾制過程中的煙葉外觀參數(shù)及水分指標(biāo),對二者進(jìn)行相關(guān)分析及逐步回歸分析,并對回歸方程預(yù)測結(jié)果加以驗(yàn)證。結(jié)果表明,煙葉在晾制過程中煙葉正面與背面各顏色參數(shù)變化趨勢基本一致,且主要變化波動集中在晾制第3天至第8天期間。晾制過程中煙葉水分呈逐漸減小的趨勢,且前期散失主要為自由水,而后為束縛水。相關(guān)分析表明,晾制期間各水分指標(biāo)與顏色參數(shù)之間相關(guān)性較好,逐步回歸方程達(dá)到極顯著水平。因此,雪茄茄衣晾制期間顏色特征參數(shù)和水分含量之間相關(guān)性明顯,可以用顏色特征參數(shù)作為輔助指標(biāo)來判斷煙葉水分含量。

Abstract: The purpose of this study is to explore the relationship between the color change of the cigar wrap and the internal moisture content during the airing process, and to provide a reference for the precise operation in the air-curing process. Using the middle leaves of Dexue No.1 as the test material, the appearance parameters and water indexes of tobacco leaves during the airing process were determined, and correlation analysis was carried out to establish a regression model and verify it. During the air-drying process, the change trend of the color parameters of the front and back of the tobacco leaves was basically the same, and the main fluctuations were concentrated during the third to eighth days of airing. During the airing process, the moisture content of tobacco leaves decreased gradually, and the main loss was free water at the early stage, then bound water. Correlation analysis showed that the correlation between the water indexes and the color parameters during the airing process was good, and the stepwise regression equation reached a very significant level. Therefore, the correlation between the color characteristic parameters and the moisture content during the airing of the cigar jacket is significant, and the color characteristic parameter can be used as an auxiliary index to judge the moisture content of the tobacco leaf.

雪茄作為一種特殊的煙草產(chǎn)品,其茄衣的外觀質(zhì)量直接決定了煙支的品質(zhì)和檔次[1]。茄衣在晾制過程中所形成的顏色對其外觀質(zhì)量有直接影響,而在晾制期間的煙葉水分變化則是其外觀顏色變化和顏色形成的內(nèi)在生理基礎(chǔ)[2]。因此,研究晾制過程中雪茄茄衣顏色變化與水分之間的關(guān)系,對于把握晾制過程中雪茄茄衣顏色變化與煙葉失水干燥的協(xié)調(diào)性有重要意義。雪茄茄衣的晾制過程中顏色轉(zhuǎn)變一般分為綠-黃-褐3個(gè)階段,包括葉綠素的降解及棕色化反應(yīng)等過程,期間需要多種酶促反應(yīng)的參與,而煙葉中水分的存在則是這些酶保持生物活性的前提[3-4]。在烤煙調(diào)制方面已對煙葉在烘烤過程中水分與顏色變化的關(guān)系進(jìn)行了大量研究,魏碩等[5]研究表明,在烘烤前對煙葉進(jìn)行適當(dāng)水分調(diào)控可加速煙葉變黃;戴培剛等[6]研究表明,烘烤過程中失水過快容易使煙葉難以變黃,形成烤青煙;相比較而言雪茄晾制是一個(gè)內(nèi)部生理生化反應(yīng)較為溫和而又緩慢的過程,目前關(guān)于雪茄茄衣在晾制期間的顏色以及水分的動態(tài)變化研究較少,對二者在晾制期間的相互關(guān)系尚不明確。因此本文對雪茄茄衣晾制過程中的煙葉顏色參數(shù)與葉片含水率、主脈含水率、煙葉自由水、煙葉束縛水和煙葉水活度之間的定量關(guān)系進(jìn)行了研究,同時(shí)進(jìn)行了晾制過程中的雪茄茄衣水分與顏色值之間的回歸分析,對回歸方程進(jìn)行了驗(yàn)證,以期為科學(xué)準(zhǔn)確快速高效判斷雪茄茄衣晾制過程中的外觀顏色以及水分的變化情況,加強(qiáng)雪茄茄衣晾制過程中的精準(zhǔn)化操作奠定理論基礎(chǔ)。
